Domaine Servin, Chablis

The first accounts
of the Servin family in Chablis can be traced back to 1654 and with over seven
generation's of traditional winemaking behind them, the domaine is well known as
one of Chablis' leading estate-owned producers. Today, François Servin manages 32
hectares of vineyards in some of the most famous parcels in Chablis, with the
majority of vine age over 35 years old.
The unique terroir of Chablis
– rich, old, limestone soil and the continental climate – produces some of the
world’s finest Chardonnays. Servin
Chablis has been exported throughout the world since the 1940s and we’re very
pleased to have them amongst our portfolio. Servin’s AOC (Appellation d’Origine
Contrôlée) vineyards extend over the famed Kimmeridgien limestone slopes
(a
combination of marls, calcareous clay and fossilised seashells, laid down during
the upper Jurassic period) on either side of
the Serein River. The continental
climate – hot in summer and cold in winter with severe spring frosts – mould the
unique character of Chablis wine, young and fresh, with unique mineral flavours,
white fruits and floral aromas which become rich, complex and powerful with
age. For François Servin, each wine
must find its own identity with an adapted treatment. He respects the traditions of handpicked
grapes for the best crus and specific
vinification for each wine, integrating modern winemaking
techniques.
Domaine Servin is world renowned and regular receives from
prominent wine writers like Stephen Tanzer who scores 85-92 for their various crus, Robert Parker Jr who awarded the
‘Les
Pargues’ 91/100 and Allen
Meadows at Burghound who rated the current vintage 89
points.
